Tsampa Pancake

Ingredients:

  • 1egg
  • 2 cups milk
  • 1 tbsp butter
  • 1 tsp brown sugar
  • 1 cup tsampa
  • 1 ½ tsp baking powder

Beat the egg with milk and melted butter. Mix the dry ingredients together. Add milk, egg and butter to the dry ingredients. Mix well and try to get the lumps out of the batter. The batter does not have to be perfectly smooth, a few lumps here and there are fine.

Heat a skillet on medium heat and add a little butter. Once the butter melts and covers the skillet scoop the pancake batter large spoon to make individual pancakes. Cook until each side becomes a light brown color.

Suggestions:

  • Omit the butter and sugar for a sugar free pancake
  • Using a very thin spatula will help keep the pancake intact since it can easily break apart while flipping due to the small amount of gluten in barley compared to wheat.
  • Mash a banana into the batter and have a wonderful tasting Banana Pancake!
